Vinification
At the crushing and soft pressing, follows the fermentat ion at controlled temperature (l 5°C) for about 10-15 days. The wine rests in stainless steel tanks at controlled temperature to be then racked and bottled; it follows a short refinement in the bottle
Tasting notes
The color is straw yellow with greenish reflections. Fine and fruity bouquet, with hints of white flowers, aromatic herbs, apple and ripe pear. In the mouth it is fresh and persistent, with slight almond and mineral notes in the finish
Food pairing
First courses with tomato-based sauces, legume soups and vegetable soups, risottos, seafood, grilled blue fish,stewed fish and not too tasty soups,as well as cheeses and white meats. Ideal as an aperitif

Trebbiano is a rustic, versatile varietal producing wines of great finesse and nuance. It was the wine preferred by the army of the Empire so much to be sometimes called “the wine of the soldiers”
