Description
Garfagnana is a land dear to the Busti Family, native of Metello, a little village 1000 meters above sea level. After a first aging period of about two months inside our dairy plant, Pecorino Metello is transferred to Metello in a cellar with totally natural conditions, where it remains for at least four months; at the end of the ripening time, the cheese wheels are covered with smoked chestnut peels. The result is a pecorino cheese with a strong and unique flavour.
